Vegan Soba Noodles
YAS soba noodle's! These tasty noodles are made from Buckwheat, they don't need a crazy recipe to be delicious. Top it off with your favourite stir-fried vegetables and add your favourite asian inspired seasonings. Check the recipe below xo
LEVEL: Easy-Medium LENGTH: 20 - 30 minutes Servings: 2
- Buckwheat soba noodles serving for 2 people
- 1/2 can drained and rinsed chickpeas
- 2 cups chopped vegetables of choice
I used carrot, broccoli, sweet potato, red and yellow pepper, onion, garlic and green onion.
- 2-3 tbsp. sesame oil
- 1 tbsp. rice vinegar
- 1 tbsp. tamari
- 1 tsp chilli powder
- sesame seeds
- pure sea salt if needed
Cook soba noodles according to cooking directions, after the cooking process to prevent them from sticking together give them a rinse with ICE COLD water.
While the noodles are cooking, in a large pan heat the chopped vegetables with 2 tbsp. of sesame oil. Once they have slightly softened add the chickpeas, rice vinegar and tamari and let simmer for 2-3 minutes until the chickpeas are heated through.
Add 1 tbsp. of sesame oil to the soba noodles and top with the vegetables, and sesame seeds.
No tricks or turns, just vegetables, buckwheat noodles and an easy seasoning to make it take delicious!
