Fresh Couscous


Level: Easy - Length: 15 minutes - Servings: 2

Couscous is a great substitute for rice! It is light, fluffy and filling! I had a box of couscous in my cupboard, and some fresh ingredients in the fridge. Here is what I made for lunch today! Perfect for bringing on the go too!

RECIPE

- 1 cup couscous - Fresh small tomatoes - Pea sprouts - Feta cheese (I use crumbled) - Lemon juice Boil 1 1/4 cup of water or vegetable stock and add 1 cup couscous. Cook for about 5 minutes, my water was really boiled and took just under 5 minutes.

Once cooked take off heat and fluff with a fork, let stand for another 5 minutes. Wash and quarter your tomatoes also wash, dry and chop off ends of pea sprouts, add crumbled feta, add a squeeze of lemon juice. Toss and serve warm or cold! If you skip the cheese, this is a totally vegan and vegetarian meal! Super tasty, fresh and healthy!!
