Easy Holiday Vegan Recipes

4 Holiday Treats to share with your friends & family this holiday season!

It's the most wonderful time of year for cooking and baking :)

Have you ever wanted to surprise your friends with some actually tasty vegan food?!

Well this is your time girlfriend!

I put together a few delicious VEGAN festive treats, that you can whip up fast - so you can enjoy the holidays without spending hours in the kitchen.

Check out these recipes below.

 

Vegan Pumpkin Pie Smoothie

(makes 2 servings)

- 1 frozen banana

- 4-5 tbsp pumpkin puree

- 1/2 cup unsweetened almond milk

- 1 tsp vanilla extract

- 2 tbsp maple syrup

- 1 tsp. cinnamon

- 1/4 tsp nutmeg

- 1/4 tsp clove

- Ice

Add all ingredients into a blender and mix until desired texture!

 

Sweet Potato Cranberry Hash

(makes 4 servings)

- 2 sweet potatoes, diced

- 1/4 cup sweet onion, diced

- 1/2 clove garlic, minced

- 1 fuji apple

- 1/2 cup dried cranberries, unsweetened

- 1/4 cup pumpkin seeds

- salt and pepper

- 1 tsp cinnamon

- 1/2 tsp nutmeg

- 1/2 tsp all spice

In a large pan heat the sweet potato until soft with olive oil. Add some salt and pepper.

Add the onion and garlic and cook for 3-5 minutes.

Sprinkle the cinnamon, nutmeg and all spice and mix until fully combined.

Add the apple and cranberries - cook for another 3-5 minutes.

Top with pumpkin seeds and add more spices if desired.

A perfect side dish for your Christmas dinner!

 

Vegan Keto Festive Fudge

This is a ketogenic recipe! Meaning full of healthy fats.

- 1/4 cup melted coconut oil

- 1/4 cup peanut butter or almond butter

- 1/2 cup maple syrup

- 1 tsp vanilla extract

- pinch of sea salt

- 1/4 cup cacao powder

Start by adding all of the ingredients *except the cacao powder* into a food processor or blender. Blend until fully combined.

Then using a thin strainer, sift in the cacao power carefully to avoid clumping! Blend again.

To keep the sides of the fudge squares smooth and clean, line only the bottom of a baking sheet with wax paper and spray on some vegetable oil/coconut oil to prevent the fudge from sticking.

Pour in the fudge mixture and chill in the freezer for 20 minutes, then transfer to the fridge to store!

I topped mine with crushed candy cane, hazelnuts and sea salt!

 

Vegan Superfood Gingerbread Bites

- 2-4 tbsp. nut butter (peanut, almond) - 5 tbsp. oats or oat bran (I used oat bran for this recipe) - 3 tbsp. molasses

- 1 tbsp. pure honey - 1 tbsp. cinnamon - 1/2 tsp nutmeg

- 1 tsp allspice - 1 tbsp. chia seeds

- 1 tbsp. flax seeds

Put all ingredients into a bowl and mix with your hands. Roll into bite size balls.

I divided the batch and rolled them into hazelnuts, crushed candy cane and cacao powder.

Put 1-2 tbsp of desired topping on a clean plate. Roll reach individual ball into the topping and let them chill in the fridge on a plate with wax paper!​ (keep them stored in the fridge) Add more wet or dry ingredients if need.
